Jo Ann's Banana Bread

This banana bread from one of our staffer's moms is simple but amazing. A tip from mom: Freeze the loaf after cooling to make the banana bread extra moist.

8 tbsp. butter
1/4 c. sour cream
1 tsp. baking soda
large very ripe bananas
1 1/4 c. sugar
1 1/2 c. all-purpose flour
1 tsp. vanilla extract
- Preheat oven to 350 degrees F. Lightly coat loaf pan with nonstick cooking spray; set aside.
- In small bowl, stir together sour cream and baking soda.
- In large bowl with mixer on medium-high speed, beat butter and sugar 3 minutes, or until light and fluffy. Add sour cream mixture, banana, sugar, flour, vanilla, eggs, and salt, and beat 2 minutes, scraping down bowl if needed.
- Pour batter into prepared pan. Bake 50 to 60 minutes, or until toothpick inserted in center comes out clean with few moist crumbs. Transfer to wire rack to cool in pan.
