According to a report from the U.S. Centers for Disease Control and Prevention (CDC) to be published in the March issue ofEmerging Infectious Diseases, about 48 million Americans suffer from food poisoning annually, one in six of us. Commonplace items like spinach and chicken can transmit pathogens tracked by CDC that cause diseases such as salmonella and listeria, either of which can land you in a hospital bed or worse.
Luckily, you can have your kale and eat it, too. Proper treatment and cleanliness minimizes the risk of foodborne infection.
